Sear the meat in batches, turning carefully with tongs, adding about one more tablespoon of olive oil for each section. Once the meat has been evenly seared with a brown crust, place the meat and any browned bits on a separate dish to the side.

Stir occasionally scraping the bottom of the pot with a wooden spoon to incorporate all flavors. Garnish with fresh parsley and serve immediately.
