Sift the confectioner’s sugar into the same large bowl. Then, add the room temperature egg whites into a bowl and whisk with a hand mixer on medium speed. Once the egg whites begin to foam, add in the cream of tartar and gradually add into the granulated sugar. Then add in the food coloring and vanilla. Beat the mixture until stiff peaks form. Once the stiff peaks have formed, begin folding in the dry ingredients gently, 1/3 at a time. The final mixture should look like wet sand. Alternatively if you can form a figure eight with the mixture without it breaking the mixture is ready.
